To make the mashed potatoes just a little bit easier you can use a potato ricer instead of a sieve. It is kinda like a large garlic press.

hmmm the way you cook rice seems very complicated, lol.
I'm a Filipino, so there's about 3 rice cookers in my house. So we just throw in half rice, half water, press ON, and in about 20 minutes you get perfectly cooked rice, in my opinion.

GREAT LIST! I'm a second year culinary student in Las Vegas and this is a very well thought out list when it comes to basics. Think about steaming vegetables WHENEVER possible, youc an lose as much as half the nurtrients through leaching if you boil them, plus they just come out so much brighter and crisper!

Regarding stickiness of rice, I was under the impression that this was related to the grain size. Long grain rice is less sticky than short grain. Has something to do with the makeup of the rice, the ratio of gluten to amelio-pectin(?). Something like that.

The method of making rice applies for almost all types of white rice. The water should be 2:1 if the rice is old (like wine older the rice better the taste) but if the rice is new the water should be 1:1 this will avoid over sticky rice. Another way to do it is to add lentils to the rice it makes for an excellent preparation and you can add any other vegetable that you desire. Only remember with lentils you have to cook it for longer (by about 10-15 mins)
