My personal top 10 would be:

10. Wittgenstein's Mistress by David Markson
9. White Noise by Don DeLillo
8. The Pale King by David Foster Wallace
7. Catch-22 by Joseph Heller
6. Underworld by Don DeLillo
5. The Recognitions by William Gaddis
4. Gravity's Rainbow by Thomas Pynchon
3. JR by William Gaddis
2. Finnegans Wake by James Joyce (there is no apostrophe in Finnegans btw)
1. Infinite Jest by David Foster Wallace

Mind you, I haven't read Naked Lunch nor have I read anything by Beckett besides a couple of plays. I also don't consider Cormac McCarthy to be postmodern. I enjoyed Fight Club and Survivor, but honestly I just don't think that Chuck P.'s writing is on the same level as any of the authors I listed other than maybe Markson. He's a poor man's Don DeLillo and lately he seems to be trying to compensate for his writing deficiencies through shock value.

I started to read naked lunch based entirely on this sites reccomendation. Damn you JFrater for inflicting this thing on me. It's awful, don't belive the hype if you were thinking of picking it up. Has interesting ideas, but they are scattered amongst page after page of demented gibberish.
Sorry, I had to get that out. That aside, I loved Breakfast of Champions. Probably no one reading this is aware they made a movie from BOA, much less a movie starring Bruce Willis. If you read BOA, however, you probably know why it just didnt work as a movie.

Sam Beckett is identified (with admitted difficulty) as where post-modernism started. He was Joyce's good friend and consciously realized he had come up with Joyce's opposite in order to have anything powerful to say in literature. Where Joyce was a true modernist (searching for meaning in a depressed world without god), Beckett was a true post-modernist (accepting the meaninglessness of life in a depressed world.) SB is absolutely a post-modern writer.

I wouldn't have included Ellis here - not because the book isn't popular - its just not good enough to be on the list.
